I (re)found the old videos by Platinum Games showcasing Metal Gear Rising's Blade Mode.

It's cute how they use watermelon models to demonstrate slicing. But the blog itself is more about different departments in the company communicating with each other, not the actual programming.
(Another observation: if the base of an object is flat and touches flat ground, Blade Mode is unlikely to generate pieces from vertically slicing the object.)
